High-carbon steel knives require specific care protocols to maintain their exceptional performance. Unlike stainless steel, high-carbon blades develop a natural patina over time—a protective layer that enhances both appearance and corrosion resistance.

After each use, hand wash your knife with mild soap and warm water. Dry immediately with a soft cloth, paying special attention to the blade-handle junction where moisture can accumulate. Never use a dishwasher, as harsh detergents and high temperatures can damage both the blade and handle materials.

Monthly maintenance should include applying food-grade mineral oil to the blade and handle. This prevents oxidation and maintains the wood's natural moisture content. Store knives in a knife block or magnetic strip—never loose in a drawer where blades can contact other utensils.

Professional sharpening is recommended annually, though regular honing with a steel maintains the edge between sharpenings. Hold the knife at a 15-20 degree angle and draw it smoothly along the steel, alternating sides with each stroke.
